7 barbecue tips and facts for Memorial Day

Memorial Day has long been the herald of summer. Barbecue grills of all shapes and sizes will be dusted off and set to blazing this weekend. Myron Mixon has a bounty of tips in his new cookbook that will make you master of your own backyard, plus a recipe for the only sauce you'll ever need.

Myron Mixon, who has written two barbecue cookbooks, makes his living opening restaurants, winning barbecue competitions, and being a judge on the show "Barbecue Pitmasters" on Discovery. 1. Barbecue is simple, don't over-think it. You really don't need a fancy grill or expensive tools to be a pitmaster. Barbecue is the modern-day equivalent of roasting meat over a fire in the woods. Actually, it still is just meat roasted over a fire ? except the woods are backyard lawns, and there are no wolves or bears.?

2. Marinate meat if you want people to like you. Marinades add layers of flavor ? meat speaks for itself, but the downfall of the average backyard grill master is the quality of the meat. Different marinades also enable variations in recipes with the same cut of meat.

3. Pork belly is bacon that hasn't been sliced yet. Let's all stay calm when we consider this. Don't do anything stupid. Walk to your cars, try to keep your hands from shaking, and keep your eyes on the road when you go buy some.

4. Vegetarians can be great grill masters, too.?It is sometimes implied or just explicitly stated that meat is the greatest and only answer to a backyard barbecue. Don't listen to people who say that. After all, meat wouldn't exist without vegetables.?

5. Don't be afraid to experiment. Did you know you can grill a pizza? Did you know you can cook a cake or a pie on a grill? Did you know that eating a slice of pie that was cooked on a grill will automatically make you weep tears of joy? Someone out there put those things on a grill once. That someone deserves the medal of freedom and a statue (that also doubles as a grill).

6. Coleslaw and cornbread are the only sides you'll need. Keep it simple, remember? Coleslaw ? cold and creamy ? has been spicy barbecue's most important accompaniment since man started cooking with fire. And cornbread is the perfect solution to sop up the sauce left on your plate.

7. The end-all recipe for barbecue sauce is now yours. "I have heard people eating barbecue at festivals say that 'the sauce makes the barbe?cue,'" writes Mixon. "It's?not true. The smoke makes the barbecue. The sauce is a finisher. It's what you put on your meat?after it cooks to enhance its appeal. It can add a great punch, but I've had plenty of delicious?barbecued meat with no sauce at all. I've been around barbe?cue sauces of different stripes?all of my life. My family's sauce recipe, which my par?ents were just beginning to market?when my father suddenly passed away, is what got me into cooking competitive barbecue in?the first place. We have always preferred a hickory?-style sauce, meant to closely evoke and complement the flavor of hickory? smoked meats. It's world famous and a secret recipe, so the?only way you'll taste the original is to order it from me, but if you insist on not giving me your business, here's a reasonable approximation that is still delicious."

The only barbecue sauce you'll ever need

?Makes about 3 cups

2 tablespoons onion powder

2 tablespoons garlic powder

Two 6-?ounce cans tomato paste

2 tablespoons paprika

2/3 cup cider vinegar

2 tablespoons Worcestershire sauce

1/4 cup packed dark brown sugar

2 tablespoons honey

2 tablespoons maple syrup

2 tablespoons kosher salt

2 tablespoons freshly ground black pepper

1. Combine all of the ingredients in a blender and pulse a couple of times to thoroughly combine.?

2. Pour the mixture into a medium saucepan and place over medium heat. Stir continuously until the sauce is heated through, but do not allow it to come to a boil.

3. Remove the pan from the?heat. Use the sauce immediately as you like, or, if reserving for a later use, allow the mixture?to cool, then pour it into a large bottle or container and store, tightly covered and refrigerated,?for up to 1 year.

MediaFire update introduces music and video streaming -

There are not that many long-standing file hosting providers around anymore. It would be too easy to blame this solely on the fallout after the Megaupload takedown even though it certainly played a major role in the demise of many hosting services.? The rise of synchronization services like Dropbox, Google Drive or even SkyDrive has without doubt played a role as well.

MediaFire is one of the remaining big players that seems to have not been hit that hard in the last year than other providers such as Rapidshare. While it still lost users according to Alexa, which may have been partially caused by the removal of the guest user upload option, business seems to have stabilized recently.

The company announced today that the service's registered user count crossed the 30 million mark, and while that includes free and paying account owners, it is certainly an important milestone.

As part of the celebration, it pushed out an update that brings native music and video streaming support to MediaFire's web and mobile apps.

How it works? A file action prompt is displayed when you click on a video or audio file on MediaFire. You get options to share or download the file just like before, and the new watch option.

If you click on watch you are taken to a new page where the music or video is streamed on.

I was able to play songs and videos while I was logged in and as an anonymous guest of the service. You can check out a sample files that are publicly accessible here. The very same streaming options are available for users of the MediaFire iOS and Android apps.

Free MediaFire users can store up to 50 Gigabytes of data on the company servers. That's a lot of storage space but the 200 Megabyte per file limit makes it less than practicable for many video files. While it is certainly possible to split larger videos into parts, it is not really that comfortable when it comes to watch those multi-part videos then.

The company is currently running a 50% off promotion for its Pro and Business accounts that do not have this limitation. The pro account, available for $2.49 per month during the promotion and the business account, available for $24.99 per month during the promotion have a maximum file size limit of 10 Gigabytes.

The introduction of a streaming feature is certainly a smart move by MediaFire considering that it not only has to compete with other file hosting services but also with file synchronization services. Especially the latter add new viewing and watching features to their services on a regular basis.

  • HTML5 video formats: m4v, ogv, webmv.
  • Flash video formats: m4v and flv.
  • HTML5 audio formats: mp3, ogg, oga, m4a, wav.
  • Flash audio formats: mp3 and m4A.

Update:

Both free and subscription holders can upload, play and store copyrighted content that is uploaded to their drive. MediaFire limits the sharing as it only allows users to share non-copyrighted video and music files. The only exception to that rule is a one-time download link to individual files.

MediaFire is using Audible Magic as a partner for determining copyrighted content.

(AP) ? Brian Urlacher wasn't sure how dominant he could be any longer, so he's calling it a career after 13 seasons with the Chicago Bears.

And what a career it was:

?Eight Pro Bowl seasons;

?Defensive Player of the Year in 2005

?A trip to the Super Bowl as 2006 NFC champion.

And now, it's over. The eight-time Pro Bowler announced his retirement through social media accounts Wednesday.

"After spending a lot of time this spring thinking about my NFL future, I have made a decision to retire," Urlacher said in a statement. "Although I could continue playing, I'm not sure I would bring a level of performance or passion that's up to my standards. When considering this, along with the fact that I could retire after a 13-year career wearing only one jersey for such a storied franchise, my decision became pretty clear.

"I want to thank all of the people in my life that have helped me along the way. I will miss my teammates, my coaches and the great Bears fans. I'm proud to say that I gave all of you everything I had every time I took the field. I will miss this great game, but I leave it with no regrets."

Urlacher was the face of the Bears, and he ranks among the best middle linebackers to suit up for a franchise with an impressive list that includes Hall of Famers Bill George, Dick Butkus and Mike Singletary.

In March, Urlacher and the Bears were unable to reach a contract agreement and he became a free agent.

"In the pantheon of Bears, Brian has earned his place alongside Halas, Grange, Nagurski, Ditka, Payton ? and yes, Bill George, Butkus and Singletary," Bears chairman George McCaskey said. "We congratulate Brian on a brilliant career and he will continue to be a welcomed member of the Bears Family in retirement."

Added receiver Earl Bennett on Twitter: "Great player... Great teammate... Awesome person!!!!"

Former Bears linebacker Hunter Hillenmeyer posted on Twitter: "(at)BUrlacher54 was the most coachable superstar, best locker room leader I ever played with. Proud to call him a teammate for 8 seasons."

And defensive end Israel Idonije, a free agent, wrote, "It was an honor & privilege to work and learn from (at)BUrlacher54 over the past 10 years. (hash)ThanksBruh."

Urlacher started 180 games from 2000-2012, and made a team-record 1,779 tackles. He has 41 1/2, 22 interceptions, 16 fumble recoveries and 11 forced fumbles.

Last year, he was slowed by a knee problem and then missed the final four games with a hamstring injury.

Urlacher had posted pictures on Twitter indicating he was working his way back into shape before the split with the Bears. But when they announced he would not be back, it was hardly a surprise.

Urlacher told the team's flagship radio station at the time that he was not shocked and the offer he received was "more like an ultimatum" in which they were telling him, "Sign this contract or we are going to move on."

The split with Urlacher was just one of many moves in a busy offseason for the Bears.

They fired coach Lovie Smith after a second straight late collapse left them out of the playoffs for the fifth time in six years, even though they did finish with 10 wins.

They replaced him with the offensive-minded Marc Trestman, hoping he could get the most out of quarterback Jay Cutler, and revamped their offensive line.

On defense, the only starting linebacker returning is Lance Briggs. Veteran free agent acquisition D.J. Williams and second-round draft pick Jon Bostic are expected to compete for the middle linebacker job with Urlacher gone.

A safety with lightning speed when he was drafted out of New Mexico, the 6-foot-4 Urlacher initially lined up at strong side linebacker for the Bears, but lost the job to Roosevelt Colvin. He made the switch to middle linebacker during his first season when Barry Minter was injured, and went on to become the 2000 Defensive Rookie of the Year, the start of a long run that saw him anchor a defense that consistently ranked among the league's best.

But he clearly wasn't his old self last year. The speed and quickness that allowed him to wreak havoc for years simply wasn't there.

Urlacher sprained his medial collateral ligament and partially sprained the posterior cruciate ligament in his left knee during the 2011 regular-season finale against Minnesota, He hasn't been the same since then.

He barely participated in training camp, had an arthroscopic procedure in mid-August to relieve the swelling, and spent most of the season trying to regain his old form.

Then, he came up lame in coverage on the second-to-last snap of the Bears' overtime loss to Seattle in early December, an injury that ended his season and, ultimately, his career.

"He was a guy that you respected from a coaching standpoint because of what he could do on the field," Detroit coach Jim Schwartz said. "I know he was respected by players and among his peers. Different kind of linebacker, you know? There are not many guys who are 6-4 playing middle linebacker. It's generally a position that shorter guys have had a lot more success, guys like Mike Singletary, who probably wasn't six feet tall; Ray Lewis about the same way.

"But Urlacher, in a lot of ways, changed the position. His range at the middle linebacker position, the speed that he played with, he was super fast."

Health News - Gym class reduces probability of obesity, study finds ...

ITHACA, N.Y. ? Little is known about the effect of physical education (PE) on child weight, but a new study from Cornell University finds that increasing the amount of time that elementary schoolchildren spent in gym class reduces the probability of obesity.

The study represents some of the first evidence of a causal effect of PE on youth obesity, and is forthcoming in the Journal of Health Economics.

The research offers support for the recommendations of organizations such as the Centers for Disease Control, Institute of Medicine, and the American Academy of Pediatrics, all of which have advocated increasing the amount of time that elementary school children spend in gym class, says lead researcher and Cornell professor of policy analysis and management, John Cawley, who conducted the study with Chad Meyerhoefer of Lehigh University (Cornell Ph.D. 2002) and David Frisvold of Emory University.

Treating variation in the amount of time that states mandate schoolchildren spend in PE as natural experiments, the researchers found that an additional 60?minutes per week of PE time (enough to bring states without an explicit requirement up to the amount of PE recommended by the CDC) reduces the probability that a fifth-grader is obese by 4.8 percentage points.

The researchers also detected a gender difference: additional PE time reduces weight for boys but has a negligible effect for girls. One explanation for this difference, says Cawley, is that PE and other types of physical activity are complements for boys (increased PE leads boys to be more active in structured physical activities like organized sports), but substitutes for girls (increased PE leads girls to spend more time watching television).

Pussy Riot member declares hunger strike in prison

BEREZNIKI, Russia (AP) ? An imprisoned member of the punk band Pussy Riot says she is going on hunger strike after a judge refused to allow her to attend a court hearing where she was seeking release on parole.

Maria Alekhina, watching the trial from a prison colony via video link, ordered her defense not to participate in the hearing Wednesday, saying the court was violating her rights.

A judge in the province of Perm in the Ural mountains, where Alekhina is being held, postponed the hearing until Thursday.

Alekhina and fellow band member Nadezhda Tolokonnikova are serving two-year sentences for "hooliganism motivated by religious hatred" for an impromptu protest in Moscow's main cathedral last year. Tolokonnikova's appeal for parole was denied last month.

A third band member, Yekaterina Samutsevich, was paroled last year.
